I think your nonstandard resolution might be causing a problem. You've set your output resolution to 960x720, but YouTube is playing that back as a 1280x720. Also the highest bitrate that is available at is 2600kbps, which isn't terrible, but it's at the low end of their suggested range, which is 1500-4000.

Images look blurry when zoomed in with Upload HD OFF but crisp and clear with Upload HD ON. Turn Upload HD on in Settings: In the Facebook App on your phone, go to Settings & Privacy, click on Settings and then select Videos and Photos. From here you’ll see the option to turn Upload HD on for both videos and photos. Turn it on and you are all set.

It sounds to me like your running games in a resolution that is not native to your display and it causes them to look pixelated. Windowed mode would look fine because the window would be the same size as w/e resolution you have set. I have a Sony 40" TV and a GTX 570 and run everything in 1920x1080. Anything lower then that gets more and more pixelated. So if your running in say 720p on a 1080p monitor, it will look pixelated.
